You're right about the 1 hex bolt; can't get it out without first unbolting the compressor bracket. When you get everything apart, replace that one with a regular bolt so you don't face this problem again in the future. The bolt that fastens the bracket to the block behind the alternator is a real b*#&h to get to. Yes, an open end wrench will work, but I would seriously consider trying out one of those Sears speed wrench things. The ones that look like an open end wrench but you don't have to remove the wrench from the bolt to turn the bolt some more. Without some such wrench, loosening and tightening that bolt is very hard to reach and tedious. I hope you have skinny arms.
Replace every gasket you can while you are in there. You shouldn't really need silicone sealant, etc. as long as the gasket surfaces are clean and don't have any deformities. If you do use any kind of sealant, only use a light film over the gasket and make sure you smear it on evenly all the way around. Personally I think that stuff is more trouble than its worth. Apply it wrong and it will cause a leak.
Since you have to drain the system to do this, I would replace the upper radiator hoses, the 90 degree heater hose at the back of the block, the thermostat and definitely the radiator fan switch (use the 80 degree one from VW, see http://www.townsendimports.com for more info).
