Well, if those are your interests then you're going to the right spot!
Fly-fishing: I don't do it myself but I think there are plenty of good spots around there. The town of Gore, not too far away, sells itself as the brown trout capital of NZ so I guess there must be some about! There are plenty of rivers and lakes in that part of the country to choose from. Just ask a local shop.
2)Skiing: try the link below. Plenty of ski-fields around Queenstown way, although I don't think they'd be open before July
3) hiking: http://www.doc.govt.nz. There is a Lonely Planet guide to hiking (we call it 'tramping') in NZ. There are lots of excellent walks down that way, including the Routeburn, Greenstone track, etc, etc
All in all, given your interests I'd say that you're locating yourself in the right place. Have you seen the movie 'Scarfies'? It is a must-see if you are going to Dunedin. If not, try and rent it; it will give you a taste of what you're in for!
Enjoy yourself. Don't forget to pick up an old 900 to cruise around in...
