Yes, that would be the wire that attaches to the temperature sensor, which basically screws into the thermostat housing/coolant passage to record the temperature of the coolant. The wire should have a female slide connector that hooks on to the back of that sensor, and should just pull off. That sensor does simply unscrew from it's position, and is very easy to replace or remove. When you do replace the thermostat make sure that you have the o-ring seated properly when you put the new one in, and make sure that you fully and properly bleed the coolant system when done.
