Using synthetic engine oil can also help to prevent aforesaid coking. However, you may have some problems with oil leaks if you do decide to change from mineral to synthetic if your car has high milegae (which I'm guessing it probably does).
Mind you, I use synthetic AND let my '85 idle for 20-30 secs as a precaution. Old habits die hard!
