The headrest does not have to be up to the top of your head to prevent whiplash. Unless you are reeeealy tall it should be fine.
The headrest (at least on my '84, assume later cars are same) was held in by a screw in the front of the seatback, near the top. Extend the headrest all the way up, then pull down the material on the seatback as much as you can. Probably designed to only remove when the skin is pulled up from the bottom, but the fabric stretched enough to access. Not sure if leather will give enough to let you get at it.
Probably a bad idea to remove the screw and pull the headrest up further, though, as it may not stay in place if you crashed or were hit and needed it.
