No thermostat?

86 16VT engine. This past weekend I elected to do some coolant system work - flush and renew coolant, new 82C thermostat, install 82C fan switch. When I removed the thermostat cap, I was quite surprised to see that there was no thermostat at all! That would explain why the temp would dip well below 92F while cruising down a long hill, and it would take a while for the engine to warm up on a cool morning.
The engine is only 3 months old for me after replacing the previously blown 82 8VT. I did not check the thermostat when installing the engine because I had limited time to do anything but install it, start it and drive away. I can't think of any reason why the previous owner would elect to remove and not replace the thermostat. Is there any good reason to not have a thermostat?
There is no problem with this engine's cooling system because after installing the new 82C stat, 82C fan switch and renewing the coolant, I took a nice long afternoon drive in 85F temps. The engine warmed up in short order and the guage stayed at 180 at all times.
