you want to do as much as you possibly can. gaskets/seals even big parts are cheap in comparison to the labor cost of getting to them. once the engine is out you can easily break it down and reassemble in a couple of evenings. use this time to thoroughly degunk the engine bay. a clean engine is a happy engine.
a gasket no one has mentioned is the oil filter block to engine block gasket. and def the drivers side upper a-arm bushings and water pump, the water pump bolts usually bind so you want to be sure you can get at them when they do.
do not remove the timing chain cover or rear seal plate unless you plan to pull the head. you will run into order of assembly issues if you do. if you decide to go whole hog and spen 100$ on a head gasket set be sure to break the head bolts free while the engine is in. however do first torque b4 before lifting the engine back in. basically if teh engine is not burning oil or making noise then you want to do as much as you possibly can, the extra $ cost is minimal. bearings prolly not worth the effort since the bottom ends are strong...but again...the parts are cheap. the rest seems like childs play after removing the transmission.
