Ok, I race bikes, so I've been carrying bikes on my Saab forever. For a convertible, you could het a Yakima receiver hitch rack, depending on the model you can carry up to 4 bikes. Very secure, lockable for when you're stopped, etc. Easy to remove, too. Also, Graber makes racks that strap to the trunk, and I think Saris still does, too. Used to work in a few bike shops selling this stuff... Also, to get an idea of what's out there, got to bikenashbar or performancebicycle websites. They're the two biggest mail order suppliers out there. One word of advice, though. I'd go to the local bike shop for a few reasons. One, they'll be able to actually look at your car and fit the best rack to it and explain the options you'll have. Also, they can show you how to properly install and unistall it. Trust me, I've seen bikes come in after a rack let go at 75 mph on the interstate. Hopefully your bikes are on your homeowner's policy... Lastly, if you have any problems, you're dealing with a person, not a phone, and usually a customer driven small business. You might spend a couple bucks more at the shop, but you'll be better off in the long run.
