I could do this chore in my sleep. Head replacement on the other hand takes me being at least half awake. But when I am sleeping while removing the calipers, I either put a rubber cap (usually a spare cap from a caliper bleed nipple) over the tubing end, or I push a piece of a stick from a tree branch filed to fit just so. Why a wooden stick? It's just that I have other things to do with my time other than than running around town in search of the perfect, but non-existent, brass fitting (oh, the pollution generated to manufacture, transport and then purchase such a fitting!) for something a simple environmentally pure piece of wood will do every time. In all seriousness, when you do disconnect the line, you'll find that the fluid flow is quite slow. In other words, a managable spillage. Whatever method used to stop the fluid, you will have spilling, so do be prepared with a covering below your work space. My favorite is a flattened cardboard box. Very absorbing. Also, rather than a thorough bleeding, you might consider allowing most of the reservoir fluid to drain in your receptical of choice, then refill the reservoir with fresh fluid. Helps reduce internal MC corrosion. Best of luck with the chore.
