Hi Jeremiah,
I've been where you are, and I have to cast a vote for the Kumho Ecsta SPT for all around summer tire. If money was no object, and this was a devoted summer driver you really like throwing around in the corners, I'd say BFG Geforce KDW's, but they run over $100/ea for 205/55/15. I have a set of Geforce Sports on my Viggen, and while they're grippy and have great wear characteristics, they're VERY noisy, to the point that I wont buy em again. The Ecsta SPT are about $65 each from tirerack right now and are great on my first gen (1985) rx7. I have a set of Kumho HP4 all seasons (cheap last-minute buy) on my 85 900t in 185/55, and theyre decent all around tires, esp. the price ($40/ea). Give the SPT's a shot, they make a big difference.
As far as size, the SPG wheel is a 15x5.5, so I think 205 is about as wide as you can safely go. Good luck!
