With all due respect...the amount of weight added by stepping up a size or two will have an indiscernable difference. Tires and wheels are unsprung weight, and while this is a significant factor in pure racing applications for a street car the difference would be impossible to tell. You say your 195/60 15 V-rated Kumhos handle and ride better than the 205's you had, were the 205's also V-rated Kuhmos, and the same model tire, with comparable wear?
To accurately compare sizes of tires you would have to compare the same make, model and wear, on the same car, on the same day, at the same place. Frankly nobody is going to do that. Best anyone can do is evaluate what the manufacturer's claims are, decide if you want an all-season tire, a touring tire, or a performance tire. Tread design, sidewall stiffness, and rubber durometer all play into a tire's ride and handling characteristics. Beyond that pick the size that gives your car the look you are after. The only other valid factor in choosing a size has to do with driving in snow. In snow, the narrower the better, assuming of course that you have plenty of tread.
One responder sggested buying used tires. Be aware that there are studies that suggest that tires more than 7 years old may be more apt to have catastrophic tread failure. Tires have a date code at the end of the DOT number that tells the week of the year and the year the tire was made. "4106" would be the 41st week of 2006. For what it's worth, you decide.
