steering rack removal - cut hoses?

Two questions:
1 - Will the car be high enough on ramps/is there a problem with leaving the wheels on when the rack is turned to maneuver out?
2 - Has anyone cut the old hoses off (at their rubber parts) before removing the rack? My theory is that I should replace the hoses anyway so why not cut them.
I already have a new high pressure hose, and the supply hose to the pump is about $11. I can re-use the metal part of the return hose by clamping a new rubber section onto it as many have done.
