I've always started at the brake closest to the MC, and worked away. However, I don't think it is critical.
When bleeding, you do want to keep the pedal down (MC open), assuming you are using a pressure bleeder. Yes, you do want to avoid pushing the pedal to the floor. Under normal braking, you really only use a portion of the MC throw. The used portion is swept clean; the unused portion of the MC bore tends to get corroded and pitted. If you push the piston into those unused portions of the MC bore, the rough surface can chew up the seals.
The Bentley is probably assuming relatively new or well-preserved cars. Don't get paranoid over it, but it would be nice to avoid pressing the pedal all the way to the floor repeatedly.
