It's not uncommon to put a used motor in a car that has had a motor failure. Generally it's cheaper then rebuilding the original motor.
For that age car and that mileage it is not uncommon to see rust on wheel arches and at bottom of doors. Especially in a car from the rust-belt areas. Just be aware that it will get worse. If rust is visible, likely it's also in areas that you can't see that might be a bigger issue. Rust to me generally says that the car wasn't well taken care of.
Restitching leather seats seams is not too difficult of a DIY job if you are handy. Or you could remove the seat skin and take it to an auto upholsterer and have them restitch it.
You cannot remove the spoiler without repair/repaint of the hatch. The spoiler is mounted with screws through the hatch.
Replacement SAAB emblems can be purchased from eeuroparts.com as well as other places. Or you could get an overlay sticker to replace it. They are also sold by a few places--quality varies.
