I'm in Central VA about 1.5 hours south of you. I did the 82 degree conversion on both the thermostat and radiator thermo switch for the cooling fan per Townsend's website. In Oct. 2009, I flushed all of the green antifreeze out, used Prestone Superflush, then used Zerex G05 which I bought at NAPA. I'm very happy with it and use the AC alot in the summertime. The temp gauge runs at around 3:30 most of the time, 3:00 with the AC on.
I don't believe there is a 79 degree, it's an 89. Good luck!
