The studs are only necessary if the wheels you're using are drilled for 1/2" (~13mm) and not 14mm. The wheels I have, and that we ran on the Lemons car, were drilled for 1/2" and there was no way a 14mm bolt was gonna go in there. The adapters let you work around that limitation. (Although, be aware, there is some safety consideration in losing material off your wheel studs...)
I've never had a problem getting them out, but they don't come out that often. A dab of red loctite holds them in, and an appropriately sized allen key in a gentle impact wrench gets them out. Mine have never rusted like that, though, so that could be part of the problem.
