Hi Ian,
I have a similar setup to you. I had similar idle problems with my '85 after fitting the AID.
Seems to me your throttle bleed is now too far open. What fixed it for me was adjusting the throttle bleed screw using a procedure which completely closes the AIC. I seem to recall that Bentley covers this, but as I remember, you ground the one-pin test connector which is near the 3 pin connector, then adjust the idle using the screw to around 775rpm -- I use a span on computerized timing light as a digital tach to perform this task with some precision... if the bleed screw is all the way closed, you'll have to dick with the throttle stop screw as well, which will also involve recalibrating the TPS... should mention you want the engine up to FULL operating temperature before doing any of this.
I still have very occasional high idle with the '85 but for the most part it's as good as before I started messing bolting bits onto it.
Your AMM adjustment procedure seems sound. I try to mess with it until, over the course of a minute or so, the needle spends roughly the same amount of time at each end of the scale.
Have you got a chip to go with the big injectors? That could be part of your problem... I installed a Jak Stoll LH2.2 chip along with my red tops so never experienced what it might be like without the correct software...
