Because restoring leather isnt cheap. If your lucky enough to have a seat that just needs some stitching, as CBS has pointed out, that's relatively cheap/ easy. But if you like the rest of us and your leathers all cracked and taken on the texture of cardboard then that's another ballgame.
At this point, you can find new skins on eBay or just have someone make them up. My experience is they go for more than I'm willing to spend on egay. That leaves you with the third option which is to repair/restore what you have. The process involves filling the crack with a bondo like substance then sand just like with body work. Then you condition and paint. Doesn't turn out as crappy as it sounds if you get good products from the start.
