the correct 82 degree fan switch is plug + play. I have 82 tstat + fan switch in both my cars. Merc coolant also.
that said, both of these cars had similar behaviour to yours even after all that updating, and both had original radiators. replacing radiators solved this problem both times... unless yours is new, I would highly expect it's time for a new rad. fortunately they are not too expensive or hard to replace.
I forget the difference in the fans. I think the newer ones don't turn on both fans except when the AC is on. I bypassed the AC on the 1989 such that the AC switch now just turns on both fans whenever I want. Kind of handy (since it is a winter beater that doesn't need AC anyway, which is good since the AC is broken!)... Townsend's site is a great resource on this. I believe he recommends rewiring the newer cars to turn both fans on at all times, but go by his site, not me (I did not do this on our 1993).
