Couple thoughts:
Assuming you are installing your gauges in the lower DIN slot (upper position of the lower cubby), it's much easier to grab lighting power/dimmer from the ashtray light bulb. The wiring is already in the lower cubby, so you don't need to traverse the knee bolster.
You can buy the green silicone light coloring booties at any speed shop or egauges.com if you don't want to use a marker.
Another grommet to use is under the brake booster. That way the wiring emerges in the engine bay, rather than having to pass through the bulkhead.
You can tap switched power from the stereo wiring, or from the ignition switch wiring that crawls up the firewall behind the cubby, or if you are really anal and are taking it to the fusebox (I am!), just use a spade connector and tap into the "rail" that is switched by the ignition lock relay that runs up the center of the fuse panel. That way, you don't need to cut or modify any wiring.
The NPT threads on the oil pressure sensor should be treated, You can use teflon tape, but Permatex High Temperature Thread Sealer is a better option. If you don't put something on the threads, you'll may get a leak. Don't overdo it, you still need a good ground signal.
