Regarding a ridge (or lack of one), I just replaced the head on my car and I was amazed to see that on my ~250,000 mi motor not only was there no ridge, but the crosshatching was still there! I mentioned that to my local indie (the venerable ScanWest), and they just shrugged and said they see that all the time. I wouldn't assume your 300,000+ mi motor would necessarily be a lot worse.
Also, I don't think you should run your mixture lean with the forged pistons. Why would you want to do that anyway?
