You say gaskets are all new... did you just rebuild the engine?
Years ago I rebuilt the engine on my SPG, started it up, and backed it out of the garage into a parking space to warm up. About 10 minutes later I came out to check on it and nearly had a heart attack when I saw the oil light was on. A check of the gauge confirmed it had almost zero oil pressure.
Long story short: when I rebuilt the motor apparently a small bit of wire from a wire brush was left somewhere inside. It got sucked into the oil pump and lodged in the pressure-relief valve on the pump, preventing said valve from closing and killing the oil pressure.
I pulled apart the valve to check it and the wire fell out - that's how I found out what the problem was. Afterward I drove the car for maybe 10,000 miles, but it eventually developed a noise that sounded like a bad main or rod bearing, that may have been related to that incident. At that point I parted out the car since the body was junk anyway.
