Take anything thing you have space for and then some. Even if you can't immediately use it yourself, there may be someone who needs it in the future.
When I stripped out a 91 900S, I left a couple of things I wish I took (cabin fan, rear axle, some glass, etc.). While I left most of the wiring, I did take many of the wiring connectors - you never know when you'll need/want an OEM connector/appearance.
RE headliner: The one I had was in really good shape. I let it go for cheap ($25 or so) because what goes around comes around.
