yeah, I would probably end up using the 195's. You'll get a bigger difference in performance by buying a better quality tire than just arbitrarily upsizing, but Sometimes you have to upsize to get the tire you want... you may find that the specific tire options available in 195 are a lot more attractive than what's available in 185.
Basically you should start with "what do I want out of the tire". For some racing or show situations, a 205 or wider might make sense. For a daily driver it probably doesn't. Read reviews of specific model tires for ride quality vs performance evaluations... stiff sidewalls make for a more bumpy ride. Touring tires and snow tires are also going to be more comfortable than performance tires.
