To save you a lot of time and aggravation,
1. It is ridiculously unlikely that the thermostat is defective.
2. I guess it is possible that the connections on the back of the mylar can degrade, but I have never seen this in the 18+ years I've serviced only 900's.
3. If the gauge registers and suddenly fails to register, it sis possible that there is corrosion on the terminal that goes to the temp sender.

4. The first and most likely is the temp sender itself. A very inexpensive ( Under $12.) and easy to get at and change.
IF THAT DOESN'T DO IT,
5. There is a diode in the fuel/temp gauge that can fail. Somewhat labor intensive since one has to remove the speedometer head assay. and then takeout the gauge and either repair or replace it. Now Saab would only replace it but the diode is replaceable with a standard 1N4002, approx. $ .05 at Radio Shack or Ebay, but one should have some basic electronic skills and know how to use a DVM. Failing the DIY approach, you could buy another speedo head, and just swap the fuel/temp gauge or send it out to a shop that specializes in speedometer/gauge repairs.
PS: One of the causes of the #5 above can be getting a boost and inadvertently, even just for a fraction of a second, reversing the charging leads to the battery.
