New thermostat is a good idea anyway, but lower temp one probably won't do anything except cause you to run too cold when the cooling system *can* keep up -- once it's open it can't lower your maximum temp. Your problem is almost certainly a flow rate problem, or a radiator efficiency problem. An occluded radiator can be the cause of both.
I'm going to bet that's your problem. My GF's old '86 900S started cooling fine under all conditions except once you got on the highway, when it ran up to the red. Turned out the rad was in horrible condition (clogged on the inside, corroded fins on the outside), and a new one fixed it right up.
Could be that the AC is a triple whammy -- you only use it when the ambient temp is already high (affects rad's ability to dump heat), puts extra load on the engine (to turn the compressor), and the AC condenser puts additional heat into the rad area.
