If your regular maintenance is in order then I should think tire pressure and maybe alignment are about it. Twisty winding roads are what SPG's are made for. My driveway sits at 4300 ft. above sea level, and my car ('93 CE) regularly goes over 7000 ft. passes, and has been over 11,000 ft. with no issues, so the Grapevine should present no problems.
By all means, drive the SPG. Given that you are driving down I-5, you will never be far from civilization. Live a little. After all, isn't that why you bought an SPG.
