...if they are perfect. Not much sense in storing body parts already rusting. If it isn't a lot of rust, you could remediate the rust and primer the whole panel BEFORE storing it away.
Also, consider if you'll have good storage available for them. They need to be kept dry if you want them to still be there when you need them. A dry basement would be good, or high in a garage. Don't store them directly on a floor that is concrete or dirt. For concrete, you can lay down some 2x4s & maybe a sheet of plywood to keep the damp off, on dirt, do the same, but with a small tarp between the floor & wood.
Before I forget - take MORE panel than you think you need. If you were going to take it up to a seam, go a bit past the seam. You never know what you'll need later...
I once cannibalized a right rear quarter from a C900 3 door. The lower forward part (B-pillar, lower sill & about 18x18 bit of panel up to the fold line) replaced a rusty panel on my 99 2-door perfectly.
