My first suspicion would be a bad sending unit. Otherwise a sticky oil pressure regulator might cause that. If you had other dash lights acting up I'd suggest checking the voltage regulator but from your description I think the first (because it's the easiest) thing to do is install a known good sending unit and see if that takes care of the problem. Let us know what you find.
