ANOTHER Clutch Issue...Help

I posted a few days ago about how to fit the release bearing, pressure plate, slave, and clutch disc back into place and managed to get it in there. I was also doing a new steering rack so last night was the first time I got to bleed the clutch and fire it up...
Here's what's happening, if I start the engine with the car in gear, it lurches and won't shift out of gear. With the engine off but the key turned on, I can shift easily through all the gears and if I then start the engine while in neutral, I can't shift into any gear.
This seems to me that the clutch isn't disengaging the gears properly, but I don't see how I would adjust the mechanical components to move differently. Is it possible I just need to bleed the system more? Could the clutch input shaft not be inserted fully? What could be the cause of this?? All input is greatly appreciated.
