I had a similar situation in my '93 900 coupe. When tracking down a leak I discovered some sort of oily residue on the passenger's side footwell, but not to the extent of your vehicle. The fluid had eaten away (dissolved?) most of the foam and rubber underlayment. The carpet is also vaguely oily where the underlayment wicked up the liquid. I tried to clean it out with engine degreaser and removed some of paint on the footwell in the process where the fluid had sat and softened things up for who knows how long.
I replaced the power steering hoses from the reservoir and pump in order for my car to pass Maryland state inspection. I'm not sure how the fluid found its way in there, but liquids do what they do.
I too would appreciate any info on what folks have done to replace the foam and rubber underlayment for the carpets. I recall a few threads where folks had given up on foam altogether due to its spongey nature.
