There should be two fans on the radiator. One turns on with engine temperature, both turn on with the air conditioning. (At least that's the way my '86 900S is.)
It's possible you have a clogged radiator. There should be no cold spots on it at operating temperature. Another possibility would be corroded water pump impeller.
Then of course there's the temperature gauge itself. Check grounds. If you have the Bentley manual it lists tests for the gauge and sensor on page 261-4. It says the sensor can be checked with an ohm meter. At 194 degrees F. (90 C.) it is supposed to be 51.2 ohms, plus or minus 4.3 ohms. You could also hook up an aftermarket temperature gauge to see if it agrees with what the dash gauge is telling you.
