I'm wondering if he installed the Air Mass Meter (AMM) from the '89 instead of keeping the original AMM from your '87. It's far-fetched, but stranger things have happened.
Another possibility is that he kept the Negative Temperature Coefficient (NTC) sensor that was on the '89 engine, and it's bad (giving the computer the incorrect impression that the engine is hot, leaning out the fuel mixture.) If that's the case, maybe putting the sensor that was on your old engine on the new one would help the problem.
