major temp guage problems... long... HELP

today's drive: 3 hours total, about 50 degrees F the whole way, all highway. clear. the problem: my temp guage in the dash looked like a damn speedometer! let me explain...
i drove for about an hour, 75 mph, and ALL the climate controls SHUT OFF. it was a beautiful day. after that hour, i glance at my dash (hadn't done so yet, i was on cruise control) and my temp guage is almost near the red! i drive this car everyday, and most of it highway, and no matter how long i've been in it, at any speed, temp guage never goes above half! so i shut off cruise, turn on the heat, and watch the guage. every time i accelerate (EVERY TIME), it moves up, and if i break or let off the gas, the guage needle moves down, and after a hell of a lot of tweaking as i drive (never gets to the red, light never comes on, so i kept going), i get to the point where i can drive 65-75 with the needle in the middle- but ONLY with the heat up to 74 and the windows cracked! that's right, shutting the windows and having the heat on made the needle go back up ever so slowly.
WHAT THE HELL IS GOING ON??? it's creeping me out. did my car's engine temp REALLY fluctuate that badly? checked coolant after a while, it's full, climate control is ok... what gives??? AAUGHH
