If this bothers you, you might want to consider getting a lower temperature thermostat.
Coolant flows from the radiator, through the thermostat, into the top of the head and down through the block. The temperature gauge sensor is located in the block right below the thermostat.
Consider after a cold start. The coolant in the head warms up the fastest, and the thermostat is still closed. Therefore, without a consistent flow, the coolant temperature in the radiator is vastly lower than the temperature in the block. When the temerature in the block becomes high enough to warm the head enough to open the thermostat, a rush of cold coolant from the radiator flows into the engine, causing the rapid temperature drop that you see on the gauge.
You will probably find that the temperature balances out as the whole system reaches equilibrium. A lower temperature thermostat might prevent this sudden drop after a cold start.
However, you want the engine to warm up as quickly as possible during cold weather. As long as the car doesn't overheat, I wouldn't worry about it.
