I would always go with an electrical gauge. In the case of oil pressure, I would rather have one device right at the engine with wires, instead of routing hot oil with at least one additional coupling to the dashboard. The possibility of a leak is greatly magnified with a mechanical oil pressure gauge. Although not critical, there will be a pressure lag in the line.
As to temperature, electrical is much better. The only mechanical alternative is a temperature conducting wire to route. This will have accuracy issues, and a major time delay.
Of course, volts or amps must be electrical.
Given how hard it will be to route an oil pressure line, and the MAJOR downside of a leak, I wouldn't go with mechanical. Also, a quality electrical gauge should be as accurate, or possible more accurate, than a mechanical one. And how accurate do you need? Do you need to know if it's really 29 or 31 PSI? As long as it reads around 30 psi when the pressure is around 30 psi, and not when it's 15 psi, that should be good enough.
