I have just recently experienced similar symptoms with a new slave cylinder I installed. It shifted fine at first, but the pedal developed a tendency to "drag" on its way up and down, culminating (after half an hour) with the pedal-to-floor failure. Since I couldn't believe that a brand new slave would instantly fail, and completely, I tried a new master cylinder, rebled, rebled, rebled. Nothing.
Was sold a slave cylinder that was advertised as "genuine Saab," and will take a good look at it once I have removed the transmission. It may well be genuine, but I am convinced that the slave itself is at fault here. I certainly hope you're more fortunate than I am; perhaps the master is the problem, or you might have a blockage in one or both of the hydraulic lines between the reservoir and clutch.
How many miles did your existing clutch have on it? It's rare and somewhat bewildering that with all the time and effort put into working over your transmission, the clutch was not replaced as a matter of course. In any case I doubt that this is a factor in your symptoms.
My final opinion is that whoever did the work owes you a new slave cylinder, dealer-sourced at that. While I'm a very satisfied customer of the source for my parts, I'm certainly playing it safe with slave cylinders from now on and paying the fifty or so extra for a dealer part there. Labor for the repair should be on the house. You may consider having the clutch replaced too so that you're not facing this repair again any sooner than you want to.
