An old blower motor gets stiff with age, and as a consequence draws excessive current. This excessive current in turn often fries the fan speed controller. When this happens you'll generally either have no fan at all, or full speed all the time.
Your controller's wackiness is less common, but happens occasionally too, and is probably also due to a worn blower motor. Unfortunately in such circumstances there's really nothing else for it except to replace the blower motor. I would think since your controller hasn't actually bit the dust yet, replacing the motor may allow you to skip the expense of the controller if you do it soon.
It makes little sense to just replace the controller, because the bad blower motor is eventually going to eat the new controller too, probably sooner rather than later.
Lots of posts on this board about replacing the blower fan. Do a search on "blower motor" and also "heater core" (the two parts are accessed the same way...and you may want to consider replacing the heater core at the same time you replace the blower motor) and you'll find tons of writeups on the procedure.
You can also try Saabnutt's advice and clean the interior temp sensor, but I'm very doubtful this is your problem. Sensor problems usually manifest themselves in the form of noise from the sensor fan, or an inability to maintain the preset temperature in the car.
