You should measure the head thickness with vernier calipers. Minimum is something a little over 139mm. No planing after that. I wouldn't worry too much about a few thousandths out of flat. I just patched the pits in my old head with JBWeld and used liberal amounts of Permatex copper spray. So far so good.
