Zerex G-05 is Mercedes-spec compliant, also good for a bunch of other cars such as Ford. It's not that easy to find; my local Autozone doesn't carry it but Carquest does. I can't say if the "compatible with all cars" antifreeze is ideal or not, but the extra quart that I needed (SAABs take 5 quarts of antifreeze) when I changed my radiator is that stuff.
If you already have all the hoses, you might as well put them on, as there will be no better or more opportune time to replace them. I mounted a new lower radiator hose to the radiator before installation and found it was a bit hard to get over the water pump flange, but eventually I got it on - maybe it's better to install it after the radiator is in place?
If you have no idea when the last time the thermostat was changed on your 21-year-old car, then just replace it, as these parts do eventually fail - I've had two OEM thermostat failures on two Audis at under 70,000 miles, and these are a lot more difficult to replace than on a SAAB.
