My only concern would be getting metal shavings into the caliper while trying to extract your broken bleed nipple. Is it broken off flush at the caliper, or is there anything to get a vise grip on? If you need to drill, consider plugging the hole first and drilling the minimum depth.
Good job finding a 7 mm Allen socket. I couldn't find one but ended up using a torx driver, which worked well. When you back those bolts out with the 7mm, the caliper comes right off. No need to try to remove the caliper from the car before that, and if fact if you do, you would have to mount the caliper in a vise to get any leverage on the 7 mm bolts. I found the Haynes manual to be good in this area. They don't cover the brake hose change, however. I learned the hard way on that one. Remove the more proximal end of the hose first (farthest from the caliper) and install that end last with the new hoses. If you use a regular end wrench on that connection, you are sure to botch the nut. Don't even try it. A flange nut wrench, which is kind of a six-sided end wrench, is a must-have, or perhaps one of those special vise grip wrenches which grip the nut on three sides.
If you need to remove a caliper, which you probably will for the one with the broken bleed nipple, the bolts are sure to be difficult. A six-sided socket wrench really helps.
