only had to add about a pint after running for a day. The level has stabilized. To check for water in the oil, run the engine until warm, then shut down and remove the dipstick. Let a few drops of oil drip onto the exhaust manifold. If it sizzles and bubbles, it has water in it; if it just smokes away, at least you're not leaking into the crankcase.
You may still be leaking into the cylinders. Pull the plugs and see if any of them look wet or smell like coolant. You might want to repeat this test if you don't find a problem the first time. Pull the plug on the ignition system for your car and crank the engine over several times. Then pull the plugs one at a time and look for a wet one. 2.0 liter engines have a tendancy to blow the gasket into the #3 cylinder, I believe; not sure about 2.3's.
