Baab:
This head is interesting, either likely gone through and reground seats that moved the valve stem "up" towards the cam, hense needing thinner shims. If the intake valve faces were ground that is OK, but wiill have the sanme effect, moving the valve tip "Up" towards the cam needing thinner shims. Any sodium filled valve 78 or late should not have its faces groung as that would grind away the stellite coating, these should be "lap fit only"
So it looks like you have a good used head that was redone without cutting a corresponding amount of metal off the tip of the valve. This is all OK provided you can get thin shims. The Saab shim selection ranged from .078" to .0108"
If the head is off the car I would have a machine shop custom grind the tips to get you back into stock shim values, or you must find this shims, I have a fair selection, but no 60's shims
