Although I have not looked for a specific source, I do know that the York piston compressor was used on many cars in the 60s and 70s, from AMC and Ford to VW and Honda, so they are extremely common. I suggest contacting the parts locator at Hemmings to see if they know of a rebuilder. I believe that the paper publication tells how to access their locator service although I'm not finding it on their website at the moment. A quick search of "York AC Compressor rebuild" turns up numerous sources of parts and service.
Let us know! I'm also interested about the R134A conversion. I assume that your mechanic replaced the receiver/drier in that process - can you share what part he used for that? I will also be interested to hear what you think about the performance with R134A. It can work fine of course, but the Saab 99 systems were pretty marginal even with R12 due to the tiny condensers they used.
