Hi Ian
I would have to agree with Oran, it would be a shame to dump the fuel injection.
I have owned both fuel injected and carby engined 99s.
K jet is a relatively simple system, and while not huge on power, it usually performs smoothly and reliably. The most likely areas of critical failure will be the fuel pump, which can be expensive and difficult to source. Any other parts that fail should be fairly easily repaired or scavenged of a newer car. Many early to mid 80s cars (ie volvos) used very similar injection systems to Saab, so it should be possible to scrounge parts of these.
To improve the longivity of your existing system, keep the fuel tank full (reduces strain on the fuel pump, and keeps it cool). You might also want to remove the fuel pump and clean out all the crap that has collected in the strainer on the fuel pump pick up.
The carby/s used on the 99 is very basic. Performance is fair, but less than injection. If you do the swap you will have to mess around with the heater and other coolant hoses, (read: custom hoses) and disconnect the coldstart/warmup device fitted to the head. Not sure how this will affect the running. Fitting the carby fuel pump will be interesting. From memory it is a cam driven pump, driven off an idler gear in the block. Not sure if the injection engines have all the gear in place to refit the carby pump pump. Using a low pressure electric pump might be an alternaive, but not sure how you will go about finding and maintaining the correct pressures. You may also have issues with the fuel lines, as injection cars have very different fuel lines.
I think by the time and cost spent on the conversion to carbs could easily be more than the time and cost of you manitaining the existing injection system.
Good luck!
Justin
