I'd have the block and head pressure tested at a machine shop. If you're going to do a proper rebuild Have the block cooked to clean the passages, cut the ridge at the top of the cylinders and have them checked for round and honed and the gasket surfaces dressed.
For the head have hardened valve seats installed (for unleaded fuel) and replace any valves that are pitted. The gasket surfaces should also be dressed on the head.
