Another possibility - a leak from the radiator core or from the seams of the radiator. Re the sudden jump to the low coolant signal the other day, you may had a large air bubble in the system. This was purged in a few minutes and greatly dropped the coolant level. With engine running, can you see any puddle developing on the ground under the engine? If not, then maybe the coolant is going out the exhaust - maybe a leaking head gasket. Go to a radiator service shop and ask them to pressure test the coolant system
