I have a 1999 t5 manual and my girlfriend has a 2002 t7. I've also noticed that the t5 has more 'snap' in top gear acceleration, but attribute this to a couple things:
1) cold weather favors the t5, as it does not feed back for produced torque
2) the t5 mechanical throttle will seem to "slack", accentuating the turbo lag, and increasing the resultant turbo kick, while the t7 will "predict" throttle movement and adjust the boost for smoother acceleration.
Conclusions:
The t7 accelerates more smoothly, while the t5 generates more of max g on acceleration
