Physically you can switch your tires assuming you have another set of 16" Saab wheels (5-bolt 110 mm offset). The 205/55/16 tires have a lower profile and will definitely make the car handle better on smooth roads. However they will probably ride worse on bumpy roads then what you are currently using. I say probably because I don't know how old and what quality are the tires you are on.
I have 205/55/16 performance tires in the summer and 205/55/16 snows in the winter. Even though they are the same size, the manufacture, rubber quality, tread design, and inflation all make the snows more forgiving on bumpy roads.
I also find that tires I have used as they get 3 or 4 years old tend to ride louder and stiffer then when they were new. Maybe you have some of that going on.
Just didn't want you to be diappointed after getting new rims and tires and still are not happy with your ride.
