Yup, exactly how I did it.
I used the radiator drain plug, since it's easy to access on my Viggen. Use a short section of hose or tubing of some sort, or else you'll end up with a bit of a mess, since Saab didn't think there needs to be any access UNDER the drain plug... wtf were they thinking??? Btw, it helps if you unscrew the cap on the overflow tank. Took me a few seconds to wonder why so little coolant was coming out :)
Afterwards, I removed the thermostat, hooked everything back up, then used some adapters to run water from a garden hose into the overfill tank (through where the coolant enters from the radiator). I let the coolant drain from the overflow hose. After running the water for 10 min, I flushed the system with distilled water a few times (filled, ran engine, drained, then repeated). I think I ended up using 4+ gallons, which is probably overkill.
Finally, I installed a new thermostat, added 1 gallon of coolant, then topped off with distilled water. System wouldn't burp itself, even after running the engine for 15 min, so I had to drive around a bit.
Questions my father kept asking me:
1) Why isn't there a drain plug in the engine block?
2) Why isn't the radiator drain plug UNDER the radiator, with access to drain DOWN?
My only answer was "Because that would make too much sense. This is a Saab"...
